Recipe »Pistachio & Honey Frozen Yogurt & Amaretto Peaches«
Ingredients:
For the peaches:
- 400g caster sugar
- 450ml water
- 50ml Amaretto
- 7-8 doughnut peaches
For the yogurt:
- 300g Greek Yogurt
- 70g pistachios
- 2tbsp honey
How it’s done:
For the Yogurt:
- Roughly chop the pistachios.
- Put the yogurt into a bowl and mix the pistachios and honey into it.
- Freeze over night.
For the peaches:
- Put the peaches into a large bowl.
- Fill a second bowl with ice cold water.
- Boil your kettle or bring water to a boil in a saucepan.
- Pour the boiling water over the peaches and leave for 30 seconds.
- Using a slotted spoon, take the peaches out of the hot water and put them straight into the iced water to cool down.
- Now you can peel the peaches.
- Put the water, sugar and Amaretto into a large saucepan.
- On a medium heat, bring the mix to a boil.
- Lower the temperature for the mix to simmer.
- Add the peeled peaches and cover with a lid.
- Cook the peaches for 5 minutes on one side, then turn them around and cook for a further 5 minutes from the other side.
- Take the peaches out of the poaching juice.
- Turn the heat up and bring back to a boil.
- Reduce the syrup by half.
- Serve the iced yogurt straight away with the warm peaches and hot syrup.
