World Pancake Day 2017 – Lemon Oat Banana Pancakes

  • 2 eggs
  • 250ml Alpro oat drink
  • 6 tbsp melted butter
  • 150 g flour
  • 50 g grated coconut flakes
  • 2 tbsp sugar
  • 1/2 lemon zest
  • 10g baking powder
  • 2 bananas
  • 30 g pecan nuts
  • maple syrup
  • sunflower oil

Mix together eggs with oat drink and 5 tbsp of the melted butter. In a second bowl put together flour, coconut flakes, 1 tbsp sugar, lemon zest and baking powder. Add in egg mixture into the second bowl and mix together quickly.


Preheat a layered pan on medium heat and add some oil. For each pancake, add a tablespoon of dough in each pan. This should be fried 2 minutes from each side until the dough is golden and fluffy.

Peel the bananas, first cut them lengthwise and then again in the middle. Add the rest of the butter to the pan and add the bananas with the rest of the sugar. Fry bananas until they are golden brown.

Serve pancakes with caramelized bananas, drizzle maple sirup on top and add some coarsely chopped peanuts.
